Ruby chocolate is a real chocolate made from the cocoa beans of the same cacao tree we know the taste of. The maker of this delicious treat assures us that there are neither any added flavours, nor added colours.

The development of this beauty had been going on since 2004, and it was patented in 2015. In 2017, it was unveiled at a private event in Shanghai.

The ruby chocolate is created by the Belgian-Swiss chocolate manufacturer known as the Barry Callebaut Group.

How is this gem made?

We’re still not 100% sure how the ruby chocolate is being made. But we do know that it’s made using ruby cocoa beans from Equador, Brazil and the Ivory Coast. Genetically speaking, they’re not different from our usual cocoa beans. The ruby cocoa beans are the existing botanical cocoa bean varieties that have been recognised as having the right attributes to be processed as ruby chocolate.

What does this invention taste like?

Callebaut describes the taste of ruby chocolate as “neither bitter, milky or sweet. It’s rather a tension of fresh berry fruitiness and luscious smoothness”. A dietician describes the taste as “raspberry flavoured white chocolate with some milk chocolate added”. ;
