Mix corn Flour, wheat Flour, salt and black Pepper Powder in a bowl. Dip the marinated chicken cubes in the flour mix, and then in the whisked eggs and fry it in oil until golden brown. Mix chilli sauce, mayonnaise, tomato ketchup, honey, garlic powder and paprika powder in another bowl and coat the fried chicken in the batter.</p>

<p>Filling</p>



<p class="has-text-align-justify">Heat the oil in a frying pan, and cook the onion, garlic and all the spices for 10 mins until soft. Stir in the vegetables and seasoning until coated and add the stock. Cover the pan and simmer for 30 mins and leave to cool.</p>



<p>Pastry</p>



<p class="has-text-align-justify">Mix flour, salt, oil and 100ml water in a bowl to make a firm dough. Knead the dough on a floured surface for 5-10 mins until smooth and roll into a ball. Cover in cling film and set aside at room temperature for 30 mins. Divide the pastry into equal pieces and roll it in a circle of 15 cm and cut it into two equal pieces. Apply each edge with little water and form the pastry into a cone shape around your fingers and seal the dampened edge. Fill all the cones with 1 tsp of mixture and press the two dampened edges together. Deep fry the samosas in batches in 1/3 of oil in a deep saucepan at 180C for 8-10 mins until crisp and brown. Take out and drain on kitchen paper.</p>

Squeeze the garlic from their skins, remove the thyme then spread basil, lemon zest and crumbled feta as the topping.</p>
