Whole Grain Banana Chocolate Chip Muffins

This is one of the most delightful and easy recipes at home that everyone would love to have as a breakfast or an evening snack. The indulgence of chocolate chips makes these muffins more delicious.

Ingredients

6 mashed ripe bananas

4 Eggs

Melted coconut oil – 2/3 cups

Almond or coconut milk – 2/3 cups

Maple syrup – 2/3 cups

Vanilla – 2 tsp

Baking soda – 2 tsp

Salt – 1 tsp

Cinnamon – 1 tsp

Rolled ground oats – 2 cups

Whole wheat flour – 2 cups

Dark chocolate chips – 1 cup

Instructions:

Preheat oven to 325F and grease two muffin tins. Whisk the mashed bananas, eggs, oil, milk, maple syrup and vanilla in a bowl and mix in baking soda, cinnamon and salt. Add ground oats and flour, and fold in until almost blended. Blend in chocolate chips and avoid over-mixing. Fill the muffin mix by ¾ of the muffin tins and place in the oven for 20 minutes. Allow to cool down and the dish is ready to enjoy.

Dynamite Chicken

Ingredients:

Chicken Boneless Cubes – ½ kg

Soy Sauce – 1 tsp

Paprika Powder – 1 tsp

Salt – 1 tsp

Dried Oregano – 2 tsp

Garlic Powder – 1 tsp

Corn Flour – ½ cup

Wheat Flour – ½ cup

Black Pepper Powder – ½ cup or for taste

2 Whisked Eggs

Coconut Oil

Chilli Sauce – 4 tsp

Mayonnaise – ¾ cups

Tomato Sauce 2-3 tsp

Honey – 1 tsp

Garlic Powder – ½ tsp

Paprika Powder – ½ tsp

Marinate the Chicken Cubes with Soya Sauce, paprika Powder, salt, dried Oregano and garlic Powder and keep for 30 minutes. Mix corn Flour, wheat Flour, salt and black Pepper Powder in a bowl. Dip the marinated chicken cubes in the flour mix, and then in the whisked eggs and fry it in oil until golden brown. Mix chilli sauce, mayonnaise, tomato ketchup, honey, garlic powder and paprika powder in another bowl and coat the fried chicken in the batter.

Chinese Tiger Prawns

This Chinese Tiger Prawns dish is one of the easy recipes to try your hands on. The dish needs less ingredients and time, and is much tasty and healthy.

Tiger Prawns – 500 gm

Olive Oil

Ginger – ½ tsp

Green Onion – ½ tsp

Cooking wine – 1 tsp

Soy sauce – 2 tsp

Sugar – 3 tsp

Salt – ¼ tsp

Rice wine – 1 tsp

Oyster Sauce – 3 tsp

Sesame oil – ½ tsp

Fry the tiger prawns in 430 F. Refry it again. Heat olive oil in a pan and add ginger, green onion, cooking wine, soy sauce, sugar, salt, rice wine and oyster sauce. Add the fried tiger prawns into the pan and pour sesame oil into it.

Orange Juice

Ingredients:

Orange – 2

Orange Drink Mix – ¼ cup

Sugar – 1/3 cup

Custard – 1 tsp

Salt – ½ tsp

White Vinegar

Tomato Ketchup – ¼ cup

Instructions:

Blitz the peeled orange, orange drink mix, sugar, custard, salt, white vinegar and tomato ketchup in a blender or food processor. Tip into a glass and drink.

Fish Tacos

This fish tacos recipe looks and tastes great with lemon sole goujons in Mexican-style soft corn tortillas with red onion, cabbage and coriander salad.

Ingredients:

Lemon sole goujons – 220 gm

Chipotle paste or harissa – 1 tsp

Mayonnaise – 6 tsp

4 soft corn tortillas

Finely shredded white cabbage – 175g

Chopped coriander – a handful

1 finely chopped or sliced red onion

Juice of 1 small lime

Lime wedges to serve – optional

Instructions:

Preheat the oven to 220C/200C. Place the goujons apart on a baking sheet and bake for 12-15 mins. Mix the chipotle paste or harissa into the mayonnaise, and warm the tortillas over a gas flame. Toss lime juice and some salt on the cabbage, coriander and onion. Spread some spicy mayonnaise on the tortillas and place the salad and fish down the centre. Top with a little more mayo and serve with lime wedges.

Vegetable Samosas

This crisp vegetable samosas recipe is ideal as a tasty starter or side dish for your favourite breakfast or dinner.

Vegetable oil – 1 tsp

Finely chopped onion – 1

Crushed garlic cloves – 2

Finely diced potato – 1 of about 150g

Finely diced carrot – 1 of about 100g

Frozen peas – 100g

Curry powder or your spices – 2 tsp

Vegetable stock – 100ml

For the pastry

Plain flour – 225g

Sea salt – 2 tsp

Vegetable oil – 2 tsp

Vegetable oil to deep fry – 2 litre

Instructions:

Filling

Heat the oil in a frying pan, and cook the onion, garlic and all the spices for 10 mins until soft. Stir in the vegetables and seasoning until coated and add the stock. Cover the pan and simmer for 30 mins and leave to cool.

Pastry

Mix flour, salt, oil and 100ml water in a bowl to make a firm dough. Knead the dough on a floured surface for 5-10 mins until smooth and roll into a ball. Cover in cling film and set aside at room temperature for 30 mins. Divide the pastry into equal pieces and roll it in a circle of 15 cm and cut it into two equal pieces. Apply each edge with little water and form the pastry into a cone shape around your fingers and seal the dampened edge. Fill all the cones with 1 tsp of mixture and press the two dampened edges together. Deep fry the samosas in batches in 1/3 of oil in a deep saucepan at 180C for 8-10 mins until crisp and brown. Take out and drain on kitchen paper.

Roasted Vegetables

This roasted vegetable dish with feta and basil is one of the perfect recipes for a summer day. This is one of the easy homemade food that can be cooked with the same amount of time required for cutting the vegetables.

Olive oil – 3 tsp

Cube-cut aubergine – 1

Cube-cut mixed coloured peppers – 2 

Wedge cut red onion – 1

Cube-cut courgette – 2

Smashed garlic cloves – 4

Sprigs of thyme – 3

Sea salt

Black pepper

Cherry tomatoes – 200 g

Basil leaves – a handful

Zest of 1 lemon

Crumbled feta – 50g

Instructions:

Preheat the oven to 200C/180C. Mix the oil with aubergine, peppers, red onion, courgette, garlic, thyme, sea salt and black pepper in a bowl. Roast it in a large roasting tin for 30 mins and return it to the oven for 10 minutes after adding the cherry tomatoes. Squeeze the garlic from their skins, remove the thyme then spread basil, lemon zest and crumbled feta as the topping.
