Nutella Cream Cake
There are several flourless chocolate cakes out there. However, this one is made out of just 3 ingredient, plenty of Nutella and a delicious chocolate nut flavour. Go on, you will not regret it at all.
Ingredients:
- 5 large eggs, room temperature
- 250g Nutella spread, extra to serve
- 500ml thickened cream
Method :
- Preheat your oven to 180°C.
- Line two small cake tins with parchment paper
- Whisk the eggs together in a stand mixer until tripled in size, light, pale and fluffy.
- Place 250g of Nutella in a large microwave proof bowl and microwave it until soft.
- Spoon ¼ of the whipped eggs into the Nutella and fold, being careful not to knock out the air as it will make the cake rise.
- Repeat with another ¼ of the egg mixture, until all whipped egg is thoroughly incorporated. Now, pour the batter into the tins and bake until set and a skewer comes out clean.
- Make the Nutella cream by heating 2 tablespoons of extra Nutella in the microwave until softened slightly.
- Whip the cream until thick, drop in the Nutella and whisk.
- When the cakes are cooled, unmold and cover the top of a cake with a layer of Nutella and then with a layer of Nutella cream. Now, place the second cake and top it with the rest of the Nutella cream.
Cinnamon Scrolls
If you have a puff pastry, some cinnamon and sugar; you are all set for this cheats dessert.
Ingredients :
- 4 sheets frozen puff pastry, left to thaw
- 1-2 tablespoons icing sugar
- 1-1½ teaspoons cinnamon
Method :
- Preheat the oven up to 180°C and prepare a baking tray with baking parchment.
- Mix cinnamon and icing sugar in a bowl and sprinkle it over the sheets of puff pastry to cover one side completely.
- Roll the sheets and cut them in several different sizes . This ensures that when they are flipped onto their sides, you can see the cinnamon swirls.
- Now, place the pastry rolls on the lined baking sheet and bake for 15-20 minutes ( until golden and crisp )
- Meanwhile, mix the remaining cinnamon and sugar with a little bit of water to make a paste. Once the scrolls are cooked, serve them warm with the paste drizzled over the top.
Chocolate Peanut Butter Fudge
You can elevate this as much as you like by adding extra fruits and nuts and everything you like. You just need to have the simple basics and you’d be surprised to know what you can achieve.
Ingredients :
- 300g milk chocolate chips
- 1 x 395g tin sweetened condensed milk
- ¾ cup of crunchy peanut butter
Method :
- Place a square slice tin with some parchment paper.
- Place some choc chips and condensed milk in a saucepan and melt together, stir on low heat until smooth and combined
- Pour chocolate mixture into the lined slice tin and keep in the refrigerator for 15 minutes to set
- Warm up your peanut butter in the microwave to soften it (15 seconds should do it). Now, spread it over the chocolate base and let it refrigerate for about 1 hour. Slice up and serve.
- Bonus Tip – heat the knife under hot water for a clean cut.
Instant Coffee Mousse
Instant coffee has more uses than just drinking. This is one of the 3 ingredient recipes : a cheeky and easy mousse. You can do the same with some cinnamon, drinking chocolate or some Milo. Try it out now!
Ingredients :
- 1 x 395g tin sweetened condensed milk
- 1 tablespoon instant coffee grains, extra to serve
- 500ml thickened cream
Method :
- In a small saucepan, heat the condensed milk and instant coffee grains for 3-5 minutes
- Cool the mixture in a refrigerator for ½ hour. Keep a couple of tablespoons of the mix for the purpose of garnishing.
- In the bowl of a stand mixer, whisk the rest of the cooled coffee mix and the thickened cream to a soft peak stage.
- Pipe it into small cups, then drizzle it over the reserved coffee condensed milk mix and sprinkle some extra coffee grains.
Chocolate Mug Cake
If you don’t have the time to mess around with the stove; take your egg mixture, add some cocoa powder, and cook it in a mug in a microwave. Voila, pancake into a mug cake real soon.
Ingredients :
- 1 egg
- 2 tablespoons cocoa powder
- ¼ cup powdered sugar
Method :
- Combine the ingredients well, then pour them into 1 large mug or 2 small mugs as convenient. This will rise and gradually settle back down. Microwave for 50-60 seconds, not more. Do not over cook. Grab your spoon and dig in while the delicacy is still warm.
