    Intriguing Montparnasse's Afro-Franco-Japanese cuisine. He grew up in the suburbs of Paris, the son of Malian immigrants to France, eating African dishes prepared by his mother and American fast food on occasion. He discovered his passion for cooking while working at a large Paris luxury hotel, and went on to work with two-Michelin-star chef Thierry Marx, a Japanophile who taught Sacko to appreciate Japanese ingredients and techniques.     Since its debut in the 10th Arrondissement in 2017, chef Adrien Ferrand's welcoming table has established itself as one of the city's best contemporary French bistros. The restaurant reflects its lively, working-class neighbourhood in the heart of Paris, which is home to two of the city's busiest train stations, Gare du Nord and Gare de L'Est. Sand-blasted cast-iron pillars, vintage tile floors, and exposed brick walls provide an industrial-chic setting for nerdy and inventive dishes. Smoked eel with Granny Smith apple, liquorice, and hazelnuts is one of the starters, as is endive braised with scamorza and chestnut cream. Grilled quail with pattypan squash and beets, a tarragon and black currant jus, and almond brittle are among the main courses, as is beef fillet en croute with ceps, salsify, and a mandarin orange garnish.
